Cookie Dough Protein Bites



I try to never have sweets in the house but being in quarantine I was craving something quick and easy that I could make to kick my sweet tooth. These are it, seriously so easy and tastes exactly like cookie dough.


WHAT YOU NEED:

8 medjool dates pitted

3/4 cup of peanut butter (or any nut-butter)

1 tablespoon of agave syrup light (or any other sweetener, maple syrup, coconut sugar etc.)

1 tablespoon of vanilla extract

1 tsp of pink himalayan salt

1 cup uncooked old fashioned rolled oats

1/2 cup almond flour

1/2 cup of protein powder (I use Bulletproof Chocolate Collagen)

1/3 cup of chocolate chips ( I use Equal Exchange dark chocolate chips)


WHAT TO DO:

  1. pit dates and add to a small pot cover with water and boil until soft

  2. add dates into a food processor and blend with 1 Tablespoon of the warm water used to boil the dates.

  3. once blended add nut butter, vanilla extract, salt, and agave.

  4. after you mixed, add oats, almond flour, protein powder and chocolate chips to the other mix.

  5. once everything is mixed chill in fridge for 10-15 min

  6. take out of fridge and roll into small balls should be around 14 balls *if the mix is still too sticky you can always add in more protein powder or oats

  7. then put back in fridge or freezer to keep!
