This is my new go-to and favorite recipe at the moment. It's super easy and is the perfect combo of savory and sweet without feeling too heavy of a meal. This can be made vegan/ vegetarian as well so play around with it and add - takeaway what you like. My picture skills don't do this justice try it out and let me know what you think!

WHAT YOU NEED // about 4 servings

2 cups uncooked rice (I use brown rice)

1 package of bacon diced (I used peppered turkey bacon) *optional

1/2 of yellow onion diced

2 garlic cloves minced

2 tsp of minced fresh ginger *optional

2 bell peppers diced (Red & Green)

1 1/2 cups Fresh Pineapple diced

3 eggs *optional


1 tablespoons apple cider vinegar (or white wine vinegar)

1 tablespoon of balsamic vinegar

1 tablespoon of soy sauce (I use braggs amino acids)

2 tablespoons of olive oil

chili flakes *optional


  1. Cook your rice either on the stove or a rice cooker. I usually cook my rice on the stove and sometimes use bone broth instead of water. *to keep the rice from being too sticky add a pinch of salt and tablespoon of ghee / butter or olive oil.

  2. Heat olive oil in a large pan on medium heat and add your bacon.

  3. Once browned, add diced ginger, garlic, onions, bell peppers until soft, about 2-3 minutes.

  4. If you want to add eggs (I can't get my hands on any since quarantine) but if you have them push some room aside in the pan and cook the eggs constantly mixing until scrambled then begin mixing into the entire pan. *optional

  5. After rice is cooked add to pan mix with the others (you can add as much or as little as you want).

  6. Add the flavoring of the apple cider vinegar, balsamic, and soy sauce *taste as you go you don't want to go overboard with soy sauce.

  7. Lastly, add in pineapple until warm, serve and enjoy!

*Tip: If you like spice like me add in a bit of the chili flakes to your liking or hot sauce.
